Pear and Brie Sandwich
Two slices sourdough bread
1 wedge brie cheese sliced
1/2 sweet yellow onion sliced and sauteed
1 pear sliced and sauteed
2 teaspoon coconut oil divided
Slice brie cheese (I cut mine about 1/2 inch thick) and place on one slice of bread. Slice onions and saute in 1 teaspoon coconut oil until lightly browned. Approximately 5 minutes on medium heat. Place on top of cheese. Slice pear and saute in same pan as onions (I didn't rinse my pan out) until the fruit is slightly browned. About 3 minutes or so on medium high heat. Place browned pears on top of onions. Add 1 teaspoon coconut oil to pan and place the whole sandwich on medium heat. Cover and cook until lightly browned. Carefully flip the sandwich and lightly brown the other side. Serve immediately with a side off salad or soup.
This sandwich is so good and there are so many options on how you could make this. Pineapple, peaches, some avocado, oooohhhhh bacon maybe?? So many options! Hope you enjoy it!
