1 box vanilla cake mix
8 oz. cream cheese
1/2 cup strawberry jelly
Strawberry Filling
2 tablespoons cornstarch
1 cup water
2 tablespoons sugar
1 carton strawberries sliced
Mix cake according to boxed directions except leave out 1/4 cup water. In a second bowl mix cream cheese and jelly together. Pour into cake batter and stir together. Bake according to package directions. After cake is done set aside and cool completely.
For strawberry filling add ingredients into saucepan and stir while on medium heat. The mixture will thicken as it heats. After about 5 minutes, or until its a bubbly thick mixture, take off stove and let cool down for a few minutes.
When cake is out of the oven take one cake layer and scoop out about 1 inch or so of the cake and pour the filling into it. Place the second cake layer on top. Frost the cake and voila! I topped mine with fresh strawberries!
