Caprese or Bruschetta?

My hubby started a square foot garden and planted basil. I LOVE fresh basil! Whenever I get it from the store it goes bad so fast, which is why we are growing it now! I made caprese and bruschetta for dinner the other night and it was amazing! Just look at the pics! Everything was ripe and crisp and delish! Easy to make and easy to eat!

For bruschetta I cut french bread and fried it in olive oil on our skillet until golden brown. I topped it with sliced fresh tomatoes, fresh basil leaves drizzled with olive oil and balsamic vinaigrette.

Little bug decided to “steal” one while I took a picture and she ate the whole thing! I used a hard, ripe tomato, fresh mozzarella, our fresh basil (just picked) and balsamic vinaigrette.

Everything was eaten in five minutes, even my bug ate it! Everything was fresh and amazing! Simple meal or appetizer for you or your family!
